Only a few countries allow the use of Natamycin as a food preservation substance. United Kingdom may use this substance in several products. Natamycin could be used in the outer part of ripened and processed cheese. The highest addition level for this products is 12.5 µg/g. It does not affect the food maturing process. The product does not interfere with the food’s natural maturing processes
