What is natamycin?

Natamycin is an antibiotic that belongs to the group of polyene macrolides produced by the actinomycetes Streptomyces natalensis. Its chemical formula is C33H47NO13 and its molecular weight is 665.74. It comes in the form of a white crystalline (or creamy white) powder.

It is used as a natural preservative in the food industry. It avoids food being spoiled by microorganisms, preventing them from becoming unsuitable for consumption.
