Development of nanoparticles for improving natamycin

Biodegradable nanoparticles are being developed as potential systems for improving natamycin using the nanoprecipitation technique, which provides nanoparticles with a spherical structure.

The active participation of the nanoparticles leads to a reduction in the diameter of the bacteria, although their encapsulation levels remain low because they are hydrophilic.

The result is a great deal of free anti-fungal molecules, and a substantial increase in anti-fungal activity, which provides a higher level of protection than natamycin bacteria that have not been treated with nanoparticles.

In the food sector, and in the packaging industry in particular, nanotechnology is also used in the production of active packaging, for which anti-fungal substances like natamycin are used in order to prolong the shelf life of packaged foods.
